Banana pudding is such a good sweet treat in the summer, but I don’t care for all the junk in the classic recipes – so I made a whole ingredient version that is high protein and much more balanced (also extremely simple, as always).


Ingredients:
1 cup cottage cheese (full fat will be thicker & more pudding-like than low fat!)
1 ripe banana
1-2 tbsp maple syrup (depending on how sweet you want it)
1/2 tsp vanilla extract
Simple Mills Honey Cinnamon Thins, or these gluten free vanilla wafers ◡̈

Combine the cottage cheese, banana, maple syrup, and cinnamon in a blender or food processor. Blend until smooth.
Scoop half of the mixture into a jar or container. Set a layer or two of cookies on top, then scoop the remaining pudding on top.
Crumble some of the cookies on the top.
Set in the fridge for at least 1 hour.
